Ingredients
1 C. Frozen Aronia Berries (thawed)
½ C. Butter (softened)
1 Lg Egg
1 C. Flour
1 C. Brown Sugar
1 ½ C. Oatmeal or Quick-cooked oatmeal
¼ t. Salt
½ t. Baking Soda
½ t. Baking Powder
1 t. Vanilla Extract
2 t. Ground Cinnamon
½ C. Chopped Pecans (optional)
Directions
Preheat oven to 350 degrees. Mix the brown sugar, butter, vanilla, egg, and rest of dry ingredients.
Add the berries (you may want to dry excess juice of the berries if thawed, otherwise your batter will become purple).
Drop the mixture by spoon and bake on lightly-greased baking sheet. Bake for 12-15 minutes until the cookies are just beginning to brown
